Clean Chocolate Peanut Butter Muffins

I LOVE peanut butter and chocolate and I miss my Reese’s peanut butter cups dearly 😦 so I attempted to make 3 different pb-choc things before I finally came up with a successful clean muffin! These babies are perfect after leg day, as a breakfast muffin, or even as a nice midday snack 🙂


P.s. I’m not sure why these guys look like coneheads.

Recipe yields 8 muffins


1 cup oat flour

1 scoop vanilla protein powder

1 tsp baking powder

1/2 tsp salt

1 tbsp butter extract

2 tbsp unsweetened apple sauce

1/4 cup stevia

1/2 cup natural peanut butter

1/2 cup egg whites

1/2 cup unsweetened almond milk

1/2 cup 70% dark chocolate chips



1. Preheat the oven to 375 degrees.

2. In a mixing bowl, combine your dry ingredients minus the chocolate chips and mix through. Then add all the wet ingredients and use a whisk or one of those machine eggbeaters and mix everything till the batter is nice and creamy. Add the chocolate chips.

3. Spray a muffin tin with pam and ladle in the batter.

4. Bake for about 16-18 minutes

5. Enjoy!
